Ingredients
- 1 boneless leg of lamb (about 2 kg)
- 6 garlic cloves, peeled and chopped
- 2 tablespoons fresh rosemary leaves, finely chopped
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
Method
- Preheat the oven to 180°C.
- In a small bowl, mix together the chopped garlic, rosemary leaves, and olive oil to make a paste.
- Season the lamb with salt and pepper on all sides.
- Rub the garlic and rosemary paste all over the lamb, making sure to cover the entire surface.
- Place the lamb in a roasting pan and roast for about 1 1/2 to 2 hours, or until the internal temperature reaches 60°C for medium-rare or 70°C for medium.
- Remove the lamb from the oven and let it rest for 10-15 minutes before carving.
- Slice the lamb and serve with your favorite sides.
